One common use case is to restrict excessive color usage while still allowing B&W prints and copies to be used as normal.
Accounting can also be used as a way to recover print costs by sub-billing a user or organization for each impression. Unlike your contract rates, you can set your own rates and bill on those. No matter how you slice it, this handy feature can save you a ton of money on your monthly print costs.
